An exquisite Geisha Honey from Eulices Fabián Quilindo in Páez. Crafted with exotic and restorative processes that reforest the farm, and produces a coffee with a clean, balanced cup with floral, lemongrass and peach flavours.
Eulices Fabián is one of the few if not the only farmer in Paez to have exotic varieties processed using innovative methods. We purchased his Geisha Honey for $29 per kg and Bourbon Natural for $36 per kg- coffees that placed among the region’s best, with his Bourbon Natural winning 2nd prize in the natural category. It is our mission to support farmers like Fabian as coffee is a powerful force for peace in a region long affected by conflict and destructive monocrops.

Process

Double fermentation (96 hours): Ripe cherries are collected with the brix of 19 degrees and a ph 5.6, they are floated and desinfected. Then they are placed in tanks for 48 hour anaerobic fermentation. After, they are pulped and placed back in tanks for another 48 hour fermentation without water. Data is collected with Brix degrees at 18 and the ph at 4. The coffee is taken to the drying rooms protected from direct sunlight, with a mx temperature of 30 degrees. The drying takes 10 days ending with a moisture content of 10 degrees.
